Safety to bank on. Pesticides are fat-soluble and thus concentrate in the oil portion of plants (and that includes olives). Choose organic to decrease exposure risks. It's eco and economical. A Greek study found that organic olive groves cause fewer CO2 emissions than conventional ones and that both methods can be economically viable for farmers.
